Aged 20 months in barrel with bold, opulent character. Flavors of rich extracted blueberry, currant and plum. 7-day cold soak and 18-day fermentation, followed by aging in 50% new and 50% one-to-two-year-old barrels creating intense, extracted qualities with firmly integrated tannin structure. Enjoy now or age for 10-15 years. Pairs with duck, beef, rabbit, spicy poultry, cheddar and blue cheeses, sausage, and rich desserts.
